Egg plates- Blender / question

I would like to make egg plates, I was wondering what blender do you use to make the egg solution = Which blender can be sterilized.
Or should I just wipe it with bleach? Do you use the manual blender? Do you know if mechanical homogeniser is autoclavable?

Hi Dominique,

We use a Waring blender with a stainless steel one-piece container that can be autoclaved (excepting the rubber gasket in the lid). The plastic/polycarbonate blender containers can be sterilized with 100% ethanol and dried in a laminar flow hood with germicidal lamp.

We have found a simplified route to egg plate production. We substitute the fresh eggs with a carton of egg product. Many institutional food services use these cartons to create the copious amounts of scrambled eggs consumed at breakfast. I could not find a retail source (caution: I am not sure egg beaters would work because of their limited cholesterol content). We obtain our “high-cholesterol” egg product from our University Food Services. A carton of eggs is purchased for approximately $2 which contains homogenized, sterile egg product, the equivalent of 30 cracked eggs. Thus sterilization of eggs for egg plate preparation only requires a quick rinse of the carton with ethanol prior to opening the box, followed by a quick flaming of the lip of the carton prior to pouring.
